Patty Hueso Gets Certificate of Completion

Patty Hueso – Hinde and Jaime’s ever smiling daughter, received her certificate of completion from the University of Guadalajara in Tourism Administration yesterday. The family was met by family throughout the state to celebrate with Patty on her special day in Puerto Vallarta. She is the first of her family to graduate with a post secondary degree. Congratulations to Patty and her Family! Patty´s official graduation date with cap and gown will be held in March.

2nd Annual Fiesta Mexicana – Saturday February 17

The second Fiesta Mexicana will be held at the El Tiburon Restaurant and Bar on February 17 2007. The proceeds of the event will be donated to scholarships for students to attend Conolep.

The Mariachi Estralla de Compostela will begin the evening’s entertainment at 5 pm. The International Ballet Folklorico will perform followed by an evening of dancing with “Rondalla Magisterial” – Maestros of Guitars.

$250 pesos includes Dinner, Entertainment and one drink.

Feb. 22-25: 7th Annual San Pancho Music Fest:

This event offers a bi-cultural  showcase of volunteer musical talent. It is a "happening," not a totally planned and scheduled event. There is no entry charge and nothing is sold. All musicians are welcome; everyone else is invited to come and listen and enjoy the festival. Musicians need an audience, and an audience needs someone on stage - spread the word. Maps of San Pancho's restaurants are available, or bring your own sandwiches, beverages and chairs.

Music/Practice Schedule:

Tues-Fri: Open stage during the day for sound checks, jamming and scheduled musicians. 

Thurs. Feb. 22: 7pm-The Redneck Mothers

Fri. Feb. 23: pm-Frida's Eyebrow, a talented group of local musicians led by Dana and Bob "Q" of San Pancho

Sat. Feb. 24: 2-10pm-live music, some planned but most are walk-ons; 4pm-Kindergarten of San Pancho

BUBBA & THE BOTTOM FEEDERS IN BUCERIAS

Oh my heavens - what an energetic and fun audience this past Sunday. From the opening song, we had dancers, can shakers and everything else one could possibly expect. And, to add to the fun and enjoyment of the day - Shag Harbour, a trio from Canada, entertained during the break with some very lively Irish and ‘down East’ tunes - a fantastic trio that had the audience burning up the dance floor.

And once again, this audience showed that they care about the less fortunate in our local communities with their generosity - making this the 2nd best day of this season. Thank you for caring.

EMS UPDATE

Last Saturday night at the Plaza in Guayabitos was great. The people enjoyed the Music and fire works. Due to the cold weather the Beer sales were slow but the people were great at digging into their pockets for donations. We raised another 3600 peso. THANKS TO ALL. We now have 16,000 plus. Our Defibrillator is approximately $3,000. US. We are also hoping to buy Portable Oximetres. The dream of the Defibrillator is close to reality and we have 2 more weeks at the Plaza in hopes of accomplishing this. Please come out and enjoy the entertainment and of course drink Beer or add to the donations.

Since putting this info in this paper I have been told that a lot of people did not realize we now have this service. We were able to get Protection Civil in one year ago (Jan. 23 2006) since then we have averaged 60 calls per month. This includes all the highway accidents and out areas between Las Varas and Lo de Marco. The 2 hospitals that we use are San Poncho and Las Varas. If necessary we also go to P.V. and Tepic. The State supplies this service as far as the wages for the men and the equipment. When I say equipment this is the trucks, ambulance and fire. The added equipment like life helping are at a minimum and are needed, medicines, defibrillators etc.

We had a request from an area to help with LIFE SAVING and WATER RESCUE. Life saving courses are obtainable here but have been unable to date to find available at this time someone to teach the Water Rescue. If anyone is experienced in this field could you please contact me at 274-1193. I will keep people up dated or if interested drop by the office at the entrance at Guayabitos. ALL HELP APPRECIATED.

La Peñita hits the big time in Montréal's Gazette


 
  • An amazing chicken from Luis

    LA  PENITA, Mexico – When you step into this beach town about 60 kilometres north of Puerto Vallarta, the first thing that hits you is Luis Erasmo Rangel Ayala’s chicken.
    He has about a dozen chickens on the go, cooking slowly atop a wood-burning barbecue on the sidewalk where the main street meets coastal Highway 200. The wood smoke mixes with the drippings from the chicken, giving off aromas that lock onto your brain stem. The perfect gold-brown-black colours of the sizzling chicken only confirm for your eyes what your nose already knows.
    Forget finding a hotel for the night, you think. Forget the beach. Let’s eat.
    We had just gotten off the bus with too many pounds of luggage when the chicken hit us yesterday, so we did have to wait till lunchtime today to visit Luis.
    After we devoured his grilled chicken – yes, the wood smoke really did penetrate every fibre of the chicken, the skin was crispy, salty and spicy and the meat was moist inside – it was time to grill the chef.
    He was coy at first, giving me the “ingredientes secret” routine when we demanded his secret ingredients. I volleyed back with my “periodista Canadian”  routine (indicating I’m a journalist, not a periodontist). He smiled, and we were in businesses.
    The recipe is so simple that even Luis, who speaks little English, was able to explain it to me, the periodista who speaks even less Spanish. I’ll admit right here that it took me some time to understand that it was Luis, and not the chicken, who was born and raised in Guadalajara. But once we settled that, I got it all down.
    Here is how to make Luis Erasmo Rangel Ayala’s magical chicken:

    Day 1
    Butterfly a 2.5-to-3-pound chicken, splitting it along the *** and pushing the bird down flat. Then liberally apply a rub made of the following five ingredients, all in the same proportion by weight, except salt, which is used at a 10-to-1 ratio: black pepper, crushed garlic, finely chopped bay leaf, cinnamon and regular (not kosher) salt.
    Day 2
    This is the hard part: build a fire. Find a way to do this, whether at your chalet in the Laurentians or by using an old fashioned  barbecue and burning pieces of hardwood instead of coal briquets. It is worth the trouble. This is where the wood-smoke flavour comes from.
    OK, you have the fire going. The flames are low and the wood is burning hot. Cook the chicken bone side down for one hour, then flip the chicken and cook it for another hour.
    Serve with your favourite beverage.

Animal Rescue

To all the fabulous volunteers & generous donors who helped make the first ever Lo de Marcos spay/neuter clinic a great success, both in the Quantity of animals fixed & in the quality of care given them!

Without you the clinic could not have happened, & we are forever grateful! To work with so many concerned & caring people, so many of who worked tirelessly for long hours under less than ideal conditions, was a marvelous, memorable experience! Also marvelous was to experience the appreciation of the community residents whose animal friends were fixed and who understand the importance of controlling/reducing the dog & cat population!
In all, 89 animals were fixed (35 female dogs, 25 female cats, 16 male dogs, 13 male cats), & there were 11 additional consultations. All animals were dewormed & treated for fleas/ticks, & all animals that underwent surgery recovered and were either returned to their original owners or adopted. Only a few remain in foster care awaiting adoption. If you are interested in adopting an animal, young or adult, please contact one of us!
After all expenses, $6,140.87 pesos remain in the Lo de Marcos spay/neuter fund that can help pay for another clinic next winter season. We need & welcome your suggestions and feedback, & we & the animals would be blessed by your continued compassion & assistance! Most sincerely,

Once in a while you find something simple but so tasty that it keeps you thinking about the last bite you had and wanting more...That´s what it is like at Mario's Tortas.   I had read rave reviews on the Jaltemba Bay folk Message board and decided to try it out myself.  I had the chicken tortas and it was everything others had said and more.  Delicious to the last bite and as I write this I want another...but unfortunately it isn't open on Sunday.  Toasted, filled with lettuce, tomatoes, a special sauce, chicken and avocados add a few jalapeños peppers (mild) and you are in heaven. So I will just have to wait.  Opens at 8 am and closes at 4 p.m. Monday to Saturday.  Located right across from the Conalep.  You can´t miss the great big green building.  There you will find Lupita and MARIO (Mario is the son of the Pina Colada owner. He speaks English they also serve great hamburgers and burritos.  Like their sign says the ¨best of the best. Right across the highway from the La Peñita RV Resort and Spa

For all of us who feel only the deepest love and affection for the way computers have enhanced our lives, read on. At a recent computer expo (COMDEX), Bill Gates reportedly compared the computer industry with the auto industry and stated, "If GM had kept up with technology like the computer industry has, we would all be driving $25.00 cars that got 1,000 miles to the gallon."

In response to Bill's comments, General Motors issued a press release stating: If GM had developed technology like Microsoft, we would all be driving cars with the following characteristics (and I just love this part):

1. For no reason whatsoever, your car would crash twice a day.

2. Every time they repainted the lines in the road, you would have to buy a new car.

3. Occasionally your car would die on the freeway for no reason. You would have to pull to the side of the road, close all of the windows, shut off the car, restart it, and reopen the windows before you could continue. For some reason you would simply accept this.

4. Occasionally, executing a maneuver such as a left turn would cause your car to shut down and refuse to restart, in which case you would have to reinstall the engine.

5. Macintosh would make a car that was powered by the sun, was reliable, five times as fast and twice as easy to drive -- but would run on only five percent of the roads.

6. The oil, water temperature, and alternator warning lights would all be replaced by a single "This Car Has Performed An Illegal Operation" warning light.

7. The airbag system would ask "Are you sure?" before deploying.

8. Occasionally, for no reason whatsoever, your car would lock you out and refuse to let you in until you simultaneously lifted the door handle, turned the key and grabbed hold of the radio antenna.

9. Every time a new car was introduced car buyers would have to learn how to drive all over again because none of the controls would operate in the same manner as the old car.

10. You'd have to press the "Start" button to turn the engine off.

OPEN LETTER FROM DOC & BARBARA

Dear Bill and Mary,
I was hoping to hear from you by now.  How is everything going in the park and do you have a good group for bridge?  Here in the mobile home park they only have poker and pinochle.  I did go over to the senior citizens center last week and they had four tables of good bridge players.  It has been so cold the last month.  It got up to 50 degrees this morning and I took the covers off my plants to find several of them frozen any way.  The last few days Ted's hip has been hurting him when we walk so this afternoon he is going to have it x-rayed and checked.  Last week I took all the tests and got my drivers license back so getting around will be much easier now.  I wish Les was here to help me.  I just hit something that erased my letter. Please tell Marlene and Shirley hello for me.  Is Sue there with Ralph this year?  How is Fran doing?  Who got our old spot?  I wrote to Jean and Jack Headley but have not gotten a reply.  Is Bill still playing volley ball?  We sure miss you al. l and would appreciate some news of the park.

It's a Small World

As a new member of the Puerto Vallarta Writer's Group, imagine my surprise to meet a fellow Veteran and his visiting publisher, who just happens to be a former Marine who's life may have been saved by my fire team in Khe Sanh in Vietnam.

The Veteran's name is Robert McLane, and we are in the company of many of Vallarta's finest writers. The Writers Group and the people that make it up are a mix of talented individuals that share a common desire to encourage folks to share their experiences, knowledge and talent by reducing creativity to writing.

The Group, and the Guests that speak there, cover every possible topic and guide one another to the ultimate goal of publishing a book. New to the Group over the last eight weeks, I have been attending the Saturday morning meetings.

However, the week before last I missed a meeting and during the following week I heard about the presentation by Robert McLane. His book "Stop War America" was published recently and he had read some passages from it.

Robert is living and writing in Yelapa. His experience in the Viet Nam War as a Marine tied him to me automatically, but what made the knot tight was his unit - he was at Khe Sanh, not during the Siege, but soon after.

This Marine and his book are about the War and the return home. It is a true account of how he was treated by the V.A., his family and particularly the Anti-War Movement, his return to America from fighting in Viet Nam and the new anti-war realities at home.

The book tells of the battle within himself: pride of service as a U.S. Marine vs. being with the anti-war movement. The undisciplined, scruffy looking veterans claiming the right to educate America through protest and dissent.

The courage to fight as hard for peace as you had for war. To do this even while the faces of those that gave their all in that war were fresh in memory. It took courage to admit that you were used for political gain, not for the national survival.

To support by necessity those who had belittled us, calling us the pawn's of the military-industrial complex. It's a book that is a demonstration of real life as a warrior for Peace. So read the book: on with my story.

With Robert was his Publisher, Earnest Spencer, the owner of Corps Publishing who had come down from California. Earnest was introduced as a best-selling author of the book "Welcome to Viet Nam, Macho Man." Speaking on his association with Robert first, Earnest went on to describe his own life's path on becoming a publisher.

Later, after our introduction, he asked who I had served with. When I replied, "Charlie Company, 1st Battalion, 26th Marines," he threw his arm around my shoulder, saying, "I'm Captain Earnest Spencer, Delta Company, 1st Battalion, 26th Marines." He asked the date and location where I got hit and I told him somewhere in Quang Tri Province, just before dusk on May 9th... "Jesus," Earnest said, "I watched your assault on the machine gun take place, it was in Leather Neck Square and that machine gun had been firing on my position all afternoon."

Thirty-nine years later, at a Puerto Vallarta Writer's Group, I meet a visiting former Marine who's life may have been saved by my fire team, and he becomes the future publisher of the book I'm writing about Veterans Benefits Outside America.

How's that for a small world?
