Flan

Recipe from Maruca Dinsmore

Maruca Dinsmore and husband David live in La Peņita Nayarit in a beautiful home on a small rocky bluff overlooking the ocean. They met in the La Peņita RV Park many years ago, married and moved to their house just beyond the border of the park.

Yet she visits almost everyday she is in town, either to play volleyball or as a guest  to one of the many parties. Maruca is an elegant hostess and friend. She is also known as the Bird Lady of La Peņita and is "Mom" to a variety of beautiful parrots, cockatiels and other exotic birds.

This recipe was given to me in the fall of 2004. It continues to delight my family and guests.

Flan

1/2 cup sugar

5 eggs

1/2 cup milk

1 teaspoon vanilla extract

1 can evaporated milk

1 can sweet condensed milk

In a heavy frying pan melt the sugar slowly. Swirl the pan in a circular motion on the burner so that it doesn't burn and so the sugar is entirely dissolved. When it is a thick caramel-colored liquid, immediately pour into a bunt cake mould. Swirl the caramel to cover the bottom of the pan and about an inch or two on the sides. Cool for 5 minutes.

Put the eggs, milk, evaporated milk and sweet condensed milk into a blender and mix.

Pour the egg mixture into the mould. Steam in a double boiler for 35 - 40 minutes. Insert a knife into the thickest area to test. It is done when the knife is clean.

Run a knife around the mould to loosed the flan. Refrigerate until served.

Note: If you do not have a double boiler, put the cake tin in a deep fry pan and completely seal with tine foil.
